I love oatmeal it is always so quick and easy to prepare while still being really good for you; but this raspberry and white chocolate oatmeal is the best I have ever tasted. It’s wonderful when the chocolate squares start to melt and you can stir them in, this also takes the edge off of the sharp tang from the fresh raspberries. Enjoy for breakfast or as a super healthy dessert.

Raspberry & White Chocolate Oatmeal

Makes: 1 Serving
Prep time: 2 mins
Cooking time: 15 mins

  • 50g Oats (I used super-fast oats)
  • 82g Fresh Raspberries (plus extra for topping) (you could also use frozen)
  • 125ml Oat Milk (or other naturally sweet plant milk)
  • 1 Tbsp Chia Seeds
  • 4 Squares Vegan White Chocolate (I used Ichoc White Vanilla)

Pour oats, raspberries and milk into a pan.

Heat on a medium-high heat and stir until oatmeal starts to thicken, about 15 mins. (while stirring I also smushed the raspberries so they were more evenly distributed).

Pour into a bowl, add chia seeds, raspberries, and chocolate on top.

Leave to cool for a few moments as this will allow the chocolate to melt. (optional)
