Soft and chewy oatmeal and raisin cookie for one. This recipe makes a huge ‘Millie’s style’ cookie; perfect for the times when you have a cookie craving but don’t want to bake a whole batch.

Large Oatmeal and Raisin Cookie For One

Makes: 1 Serving
Prep time: 10 mins
Cooking time: 12 mins
Storage: Best eaten on the same day but can be stored in an airtight container for a few days.

  • 18g Flour
  • 1/8 tsp Cinnamon
  • 1/16 tsp Nutmeg
  • 1/16 tsp Salt
  • 1/16 tsp Baking Soda
  • 11g Vegan Margarine
  • 8g Light Brown Sugar
  • 13g Golden Caster Sugar
  • 1/8 tsp Vanilla Extract
  • 1/8 tsp Non-dairy Milk
  • 10g Oats
  • 13g Raisins

Preheat the oven to 180C/350F/Gas Mark 4

Put a small piece of grease proof paper on a baking tray.

In a small bowl combine flour, cinnamon, nutmeg, salt, and baking soda.

In another small bowl combine the butter and sugars to a creamy consistency. Add milk and vanilla extract and mix.

Add flour mix to butter mixture and mash together to get everything combined.

Add the oats and raisins and mash again, the mixture will still be crumbly but should hold together when squished with your fingertips.

Gather the dough together with your hands and roll into a ball.

Place on prepared baking sheet and flatten with your fingertips to about a centimetre thick.

Put in the oven for 11-13 minutes, depending whether you like your cookies super soft or chewy. (keep in mind that these cookies get more crunchy and hard when cooled)

Let cool for a few minutes before transferring to a wire rack to cool completely.
