These baked beans are hearty and warming and are great as a side or a main dish.

Easy Vegan Baked Beans

Makes: 8 Serving
Prep time: 20 mins
Cooking time: 40 mins
Storage: Can be stored in an airtight container in the fridge for a few days. Can be frozen for longer and to serve should be thawed in the fridge and heated thoroughly through.

  • 1 Onion, diced finely
  • 1 tsp Cumin
  • 2-3 400g can Beans (I used mixed organic beans)
  • 1 Jar Passata
  • 2-3 Tbsp Tomato Ketchup
  • 1 Tbsp Molasses (or dark brown sugar)
  • Salt and pepper to taste

Chop and dry fry onions, once softened (about 5 mins) add cumin and toast for another minute or so.

Put cooked beans in a glass roasting dish and pour over passata, molasses and ketchup and stir.

Put salt and pepper and onions in bean mix and stir.

Bake 180C/350F/Gas Mark 4 for 40 mins.
